During Hurricane Sandy, I’ve been limited to a few things. Other than laying in bed and sleeping, hanging out with my stranded best friend (works in my favor [: ) and working, I’ve been COOKING. My weird love and passion.
Because my roommate was diagnosed with Celiacs at 17, she has the bittersweet memory of delicious things like pizza and fried chicken that she can no longer eat! SOOO, I made it my goal to make her all these delicious foods from scratch (good ol’ proper way from crust to the buttermilk bath).
The Pizza is a gluten-free dough with Jalepeno-Cheddar Cheese Stuffed Crust with Mozzarella, Roasted Chicken & Peppers, Pine nuts, Cilantro over a tomato-basil sauce. Then, we made brownies. (Day 2 and 3 of our Sandy quarantine)
